Caldeirada [East Timor/Timor Leste]

Caldeirada from East Timor/Timor Leste Ala Tekkadancs


Ingredients:
3 onions Bombay
chopped 4 cloves garlic
crushed 1 green bell pepper, roughly sliced
​​30 ml olive oil
30 grams parsley (minced)
slightly saffron or turmeric powder
250 grams potatoes, peeled, dice sliced
2 pieces bay leaf
6 pepper 2 large red tomatoes, chopped
30 grams tomato paste
125 ml water
250 grams squid, clean
12 shellfish
450 grams tuna / salmon meat, cut into pieces
450 grams snapper meat, cut into pieces
150 grams large shrimp
225 grams good large raw prawns
12 fruit mussels mussels
Black pepper powder
15 grams chopped korriander leaves

Steps :
§    Stir-fry onions, garlic and peppers until wilted.
§    Cover the pan and cook over low heat until the peppers are slightly tender.
§    Add parsley, saffron, potato, bay leaf, pepper, tomato, tomato paste and water.
§    Stir and cover the pan, cook for 10 minutes.
§    Add the squid and the shell, bring to the boil again.
§    Add fish and shrimp meat. Cook over low heat until everything is cooked.
§    Enter the powdered pepper, stirring until boiling.
§    Lift.
§    Pour into a serving bowl, sprinkle cilantro. Serve, with bread.
