Mansaf [Jordan]

Mansaf from Jordan Ala Tekkadancs



Ingredients :
2 slender sheep (1-1 ½ inch cut cubes, replaceable beef)
½ cup of butter (use samna or ghee if available)
Salt and pepper to taste
1 medium onion, finely chopped
4 plain cups of Greek Yoghurt
1 egg whites
1 teaspoon of pepper
½ teaspoon coriander (see spice note below)
1 ½ teaspoons cumin
½ teaspoon of peppers
¼ teaspoon cardamom
½ cup of whole pale almond
½ cup of pine nuts
4-6 loaves of pita bread (khubz, Arabic ribbon-type bread used in Jordan)
3 cups of rice, raw size, cooked (Jasmine med or either Basmati)
parsley or scallion, chopped for decoration

Steps :
§    Wash the meat and place it in a closed tray. Soak the meat with water, and put in the refrigerator for 4-8 hours.
§    Liquid ¼ cup butter in a skillet over medium-high heat.
§    Drain and pat dry meat.
§    Place in a pan and cook for 20 minutes until browned on all sides.
§    Season the meat with salt and pepper, to taste, and add enough water to cover the meat.
§    Reduce heat, cover and cook for 1 hour. Add the onion and simmer for 30 minutes.
§    While fried meat and onions are cooked, put yoghurt in a large pan and beat over medium heat until liquid.
§    Whisk white and ½ teaspoon salt.
§    Stir gently yoghurt to a boil with a wooden spoon in one direction only to achieve the desired consistency.
§    Reduce heat to low and let yogurt for 10 minutes.
§    Stir yogurt into the meat and add the desired flavor.
§    Boil over low heat for 15 minutes. Adjust seasonings and flavors, as needed.
§    In a small skillet, melt 2 tablespoons of butter. Add almonds and cook for 5 minutes. Stir in pine nuts and cook for 3 minutes. Lift and set aside.
§    Put the khubz bun on a large tray.
§    Melt 2 tablespoons of butter and apply on khubz bread until softened. Set the rice on the khubz bread and leave the hole in the middle.
§    Put the meat into the hole in the middle and then give butter and beans over the meat. Sprinkle parsley or scallion on top.
§    Typical Jordanian Delicious Mansaf is ready to serve.
