Miju-Miju Soup [Palestine]

Miju-Miju Soup from PalestineAla Tekkadancs

Ingredients :
¼ cup olive oil
1 cup red onion, finely chopped
1 cup red beans, washed
2 cubes of vegetable stock
Salt to taste
1 tablespoon of cumin
1 teaspoon of turmeric
½ lemon, squeezed
Parsley for decoration

Steps :
§    Heat the pan over medium heat, saute onion that has been minced finely with olive oil until brown colored.
§    Put the beans and stir with onions 1-2 minutes. To give a better taste, nuts can also be roasted before pan-fried.
§    Add vegetable stock and 6 glasses of water. You can also add 6 cups of homemade chicken stock.
§    Cover the pan and let it be cooked under low heat for 1 hour or until the lentils become soft and creamy.
§    Once they are cooked, add cumin, turmeric, salt to taste, and lemon juice.
§    Stir the whole mixture using a blender to make the soup to be coherent and creamy.
§    Decorate with parsley and serve while hot.
